Our process is a harmonious blend of tradition and innovation, rooted in the rich history of American whiskey-making and enhanced by our unique approach to aging and blending. Here's how we create a bourbon that stands apart.
🌾 From Kentucky's Heartland
Our journey begins in Kentucky, where our bourbon is distilled and aged for at least two years along the banks of the Ohio River. This region's unique climate, with its distinct seasons, plays a crucial role in developing the complex flavors of our whiskey. The temperature fluctuations cause the spirit to expand and contract within the barrel, extracting rich notes from the charred oak .
🚢 The River Voyage
Embracing the historical method of transporting whiskey, we send our barrels on a river journey from Kentucky to New Orleans. This voyage, lasting between 11 to 29 days depending on river conditions, subjects the barrels to constant movement, temperature changes, and humidity variations. These factors intensify the interaction between the whiskey and the wood, enhancing the maturation process and adding depth to the flavor profile .
🪵 Stave Finishing
In adherence to bourbon regulations prohibiting additives, we utilize various oak staves to influence the flavor of our whiskey. By selecting different types of oak and applying specific toasting and charring techniques, we can impart unique characteristics to the bourbon. This method allows us to craft a distinctive taste without compromising the integrity of the spirit .
🛢️ Double-Casking Technique
To further enhance the complexity of our bourbon, we employ a double-casking process. After the initial aging period, the whiskey is transferred to a second barrel, allowing it to absorb additional flavors from the fresh oak. This technique requires more time and resources but results in a richer, more nuanced spirit .
🌡️ Controlled Entry Proof
We introduce our whiskey into the second barrel at a lower proof—specifically at or below 52.5% alcohol (105 proof). This lower entry proof facilitates a better exchange between the spirit and the wood, leading to a smoother, more refined bourbon .
🧪 Artful Blending
Once the aging process is complete, we meticulously select and blend barrels to achieve a balanced and flavorful bourbon. Our small-batch approach ensures consistency and quality, allowing each bottle to deliver the rich, full-bodied taste that Left Bank is known for .
